Thursday 8/3 – Jeffers Drops Acid… Knowledge comes to Imbibe Wine and Spirits this Thursday! Jeffers Richardson—director of Firestone Walker’s Barrelworks wild beer facility – talks sour beer, acidity, sensory perception, and science, lots of science in this seminar. This extremely exclusive event is limited to 30 participants and is a must attend for sour beer connoisseurs. The guided flight will consist of SLOambic American Wild Ale, Bretta Weisse Berliner Weissbier, and Lil-Opal Saison/Farmhouse Ale. Call Imbibe to reserve your ticket, this event will sell out. $45
Jeffers Drops Acid…Knowledge Itinerary
I. Intro: Perception of Acid. Taste. Overview:
Perception: Being aware through one's senses
Five Tastes (on the tongue). Focus on sour/acid.
Exercise: Taste a sour jelly bean. Differentiate
between taste and smell.
Definition of pH.
Uses in Brewing.
III. Titratable Acidity.
Definition of Titratable Acidity.
Perception of tartness/sour.
EXERCISE. Taste two acid samples-describe what
The Difference between pH and T.A. taste.
IV. Not all acids are the same or equal. Lactic Acid vs Acetic
Soft acidity vs harsh acidity (volatile acidity)
Produced by different bacteria
Brettanomyces can produce acetic acid
V. Focus on Lactic Acid.
EXERCISE: Calibrate the participants
Participants describe what they have tasted. Should
note increasing/stronger acid taste.
VI. EXERCISE: select 3-4 beers. Have participants taste and
estimate the T.A. Keep calibration samples so
participants can go back and re taste if necessary.
VII. Discussion/Conclusion. Correlation between

Drink like a Local
Catching up with our local breweries.
The second batch of Lil Miss Strawberry Wild Ale was released to the public yesterday over at Dionysus Brewing Company. The month of August will see a new bottle release each week. This week is their third Olympus Barrel Society membership release, batch 3 of Currantly Noir with Vanilla beans Wild Ale. Membership bottle releases are not available to the public but the beer will be on draft for public consumption. The following week we can expect Through the Ages, foeder-aged American Golden Sour released to the public. Week 3 will see Berlinersfield with Apricots Berliner Weissbier released for the public and Super Funkadelic Gose with Blueberries, vanilla, cinnamon, and Sea Salt comes out in week 4 for the public. Dio will be pouring at GABF this year. They are entering four beers in the completion: Lil’ Miss Passionfruit, Currantly Noir w/Vanilla Bean 2016, Rose Sauvage 2017, and Lil’ Miss Blackberry 2016.
Lengthwise Brewing Company has a record number of Lengthwise beers on tap at the brewery, 21 to be exact, including the new Grapefruit Zeus Imperial IPA. Their next brew batch is the White IPA with a yet to be determine fruit added. For consideration: Peach, Plum, or Cranberry. Their Barrel Aged Saison that’s been in red wine barrels since last September is on the verge of being released. Expect to see it in the coming weeks.
Local Craft Beer Tehachapi just released Passion of the Blonde Passion Fruit Blonde at the brewery. The Wall Lager and Blue Oak Coffee Stout are back in the fermenters. On Tuesday The People’s Champ NE DIPA brewed with Citra, Mosaic, Idaho 7, and El Dorado hops will be released in bottles. The Cloud Juice is Real AF NE DIPA, the collaboration with Dionysus Brewing can release is set for Friday 8/11. The next membership bottle release will hit in the next couple of weeks. Beer and date to be announced soon.
New on tap up at Kern River Brewing Company is Dank Mardukas West Coast Pale Ale coming in at 6.6% with Waimea, Amarillo, and Chinook hops. This was brewed in the pub’s 7 barrel system and won’t see distribution. Available on draft at The Pub and Backyard, growler fills are ok. Fresh distro: Just Outstanding IPA cans and draft (7/25), Isabella Blonde bottles and draft (7/28), Sequoia Red Ale draft (7/28), Long Swim DIPA bottles and draft (8/1), and another round of Just Outstanding IPA bottles and draft (8/4).
One Hit Wonder, Hazy Afternoon Session IPA with Mosaic, Citra, and Mandarina Bavaria hops is on tap at Temblor Brewing Company. Next One Hit Wonder will be a yet to be named DIPA. Temblor’s anniversary party dubbed Temblorfest is September 23rd and will feature their Temblorfest Marzen and an Anniversary DIPA.

The First Annual Rockin River Beer and Music Festival is October 21st in Kernville at Rivernook Campground. Benefiting local non-profit, Keepers of the Kern, the festival has a respectable initial line up of breweries including all of our locals, some representation from the surrounding counties, and a few that aren’t common at our local festivals such as Arrow Lodge Brewing, Bitter Brothers Brewing, Three Weavers, and more. They are still announcing breweries so expect more surprises. The event is scheduled from 1 – 5 pm with VIP getting in an hour early and will have music from Lonely Avenue, Weedpatch Carnival, Stoneflys, and The Usual Haunts. Tickets go on sale August 1st on Eventbrite. $25DD/$55GENERAL/$75VIP

Mash Time – A Brewing Podcast – A local station for discussing home brewing and craft beer, hosted by Stuart Hoetker and John Agee out of Bakersfield CA. Episode 20 see’s the triumphant return of co-host John and special guest, Sean Vansickel a local home brewer, adept in the art of bottle conditioning for his second appearance on the show. Stuart juggles mic work and brewing duties as they attempt a stout with bananas in the mash.
IPA Today Podcast – A local podcast critiquing beers and wasting time. Hosted by Kenny and Richie with frequent appearances by Uncle Frank and Joey. Episode 50 is part two of the L.A.Ramos podcast. Expect a slight downhill slide with some beer talk.
I’m Not Kevin Podcast – A podcast with a focus on stories and random talk with friends and family hosted by Shawn, an average guy from California. They usually drink beer and occasionally talk about beer. Check them out and give a listen. Episode 20 and Episode 21 are parts one and two of a joint podcast with IPA Today’s Kenny featuring Instagram Beer Sensation Lysander Ramos (L.A. Ramos).

The Perfect Pour Podcast – Check out this Fresno based craft beer podcast that recently hit 200 episodes. Hosted by Nick, Matt, and Mikey with bumper music by Sunburns, their content certainly has a Fresno focus but there’s lots of relevant beer talk, beer tasting, beer news, listener voicemails, and the occasional beer celebrity guest. It’s a well-executed, organized podcast that is entertaining and informative. Episode 209 titled Fresh IPA’s are Ruining Everything tackles the question: What beer would you serve Oprah? Get nostalgic, In lieu of episode 210 which was temporarily lost, the guys re-released episode 3.

His enthusiasm for the beer he’s drinking is infectious and makes you want to run out and grab one. A good portion of the beers he’s reviewed are available locally so it’s certainly a good resource. 2017 GABF tickets go on sale this week. The Great American Beer Festival is the premier U.S. beer festival. The medals won at the competition portion of the festival are highly coveted. This year is the 36th version featuring the largest collection of U.S. beers ever served in a public tasting event. Tickets will be available for purchase August 1st for BA and AHA members and August 2nd for the general public here.
